I have a selection of leftover beer in the fridge, some of which I probably won't drink. I grabbed a can, poured it into a bowl, and zapped it in the microwave to take the chill off. <br />
In a glass measuring cup, I proofed the yeast with a little bit of beer and warm water, pinch of flour and sugar.<br />
When things got bubbly, I put the beer and proofed yeast mixture into the bowl of my KA. Using the paddle, I added some flour, a bit of salt, and leftover bacon grease. As I added flour towards the end, I threw in some shredded cheese, a blend of Asiago, Romano, and Parmesan. It was a wet dough, didn't add too much flour, still a bit sticky. I put it into an oiled bowl, covered with plastic wrap, left it on the counter for a couple of hours.<br />
I turned it out onto a floured surface.<br />

I peeled (by dropping into boiling water briefly), and seeded them. I put the pulp and some of the strained juice into a small saucepan with some butter and cooked it down. I seasoned it with salt, pepper, and mixed herbs from my garden: oregano, basil, rosemary, parsley. After the liquid reduced, I added a very small pinch of baking soda, let the foam subside, then added heavy cream, let it come to a simmer, then turned off the heat. I finished it with a dollop of home made creme fraiche. Anyway, it might have been called a fudge cocoa cake or something like that. <br />
I used strong coffee instead of water, and added the zest of one orange, using a microplane. After the layers cooled, I brushed them with kahlua.<br />
It was frosted with an easy butter cream: butter, powdered sugar, vanilla, cocoa, pinch of salt, coffee. Garnished with long strips of orange zest. Served with Breyer's Natural Vanilla ice cream.<br />

I the backs and wing tips from the Cornish hens I prepped for dinner last night into a small slowcooker. I added carrots, celery, parsley, garlic, a couple of cloves, and peppercorns, and covered with water. I set it on low, and left it overnight. In the morning, i strained it and let it cool a bit before setting in the fridge I'll lift off the accumulated and hardened fat before use. Maybe use it to saute some vegetables.<br />

Upon our return, I drained the wheat berries, put them in the rice cooker with chicken stock, a bay leaf, a smashed garlic clove, and a splash of olive oil.<br />
They cooked for a bit, maybe a little longer than brown rice, and I added some water along the way.<br />

I also added some dried zest. The dried fruit was soaked in Wild Turkey Honey for a week or two. I used a processor to dice the fruit into smaller bits.<br />

They baked at about 325, mini-muffins took about 25 minutes, the loaves closer to an hour.<br />
