Veggie Chipotle Roll-Ups
Using up leftovers from Super Bowl Sunday's crudite platter and chipotle cheese spread: The chipotle spread consisted of cream cheese, miracle whip, sour cream, chipotle in adobo sauce; put all in a processor, puree until smooth.
Spread it on a slightly warm tortilla (will roll easier), top with chopped vegetables: pea pods, red peppers, green onion, shredded carrots. Add arugula. Roll. Wrap in plastic wrap tightly, chill. Can either slice in half, or in one inch pieces to serve.
Eggplant Lasagna
In a small, straight sided ramekin, layer the following:
Roasted eggplant slices (salted, drained, rinsed, roasted until fairly dry)
Sliced tomatoes
Tomato sauce (used a canned spaghetti sauce)
Ricotta (w/egg, oregano, parmesan, mozzarella)
Top with layer of cheese.
Bake until hot and bubbly all the way through.
Citrus Sticky Buns
I stumbled across a recipe for Lemon Sticky Buns, I adapted the recipe to what I had on hand.
Dough:
In a liquid measuring cup: yeast, sugar, flour, warm water; let proof.
In a large bow: warm milk, soft butter, sugar, cream, vanilla, salt
Mix yeast into the wet mixture.
Add enough flour to make a nice dough, knead. Let rise. Punch down, then roll out into a rectangle.
Spread with: softened butter, simple syrup (with orange zest, lemon extract), orange juice, Meyer lemon infused olive oil, lemon extract, ginger, nutmeg.
Roll up, cut, put into greased pans.
Let rise.
Bake at 350F (convection) for about 25 minutes.
Frost while warm with: soft cream cheese, powdered sugar, cream, fresh orange zest, citrus simple syrup.

Beef/Pork Sliders
I cheated, and used frozen bread dough, the Texas rolls. After thawing, cut in half, then form rolls.
Combine pork and beef, season with pepper and thyme.
Salt right before frying. I started them on one side in a large cast iron shallow roaster. Turned them, then finished in the oven. Topped with a Co/jack Pepperjack cheese.
Served on a bun with arugula and chipotle spread: cream cheese, sour cream, mayo, spoonful chipotle puree.

Yes, that easy.
Served with a dip made from cream cheese, jarred processed cheese(yes), shredded colby/jack, sour cream, mayonnaise, dried onion, mustard.
Frizzled Egg
Served with roasted potatoes: parboiled potates, then drained them, coated them with olive oil, seasoned with store brand grill seasoning: chicken, black pepper, and poultry seasoning. Roast until golden.
I love eggs with golden brown crinkly edges and a runny yolk.
Nice with fried kielbasa.

Mac-n-Cheese
Make a roux with butter and flour. Add half-n-half, a bay leaf, spoonful dry mustard, pinch nutmeg, salt and pepper. Cook. Add half a jar of processed cheese (yes.), and several handfuls of grated colby/jack. Add to cooked pasta (al dente). Add enough milk to make it wet, slightly soupy. Bake. I used bread crumbs, butter, chives to top it off.

Egg
Catsup
Spoonful of bacon fat
Mustard
Thyme
Salt and pepper
Pretty simple:
Mix it all together. I should have used 2 eggs. More catsup on top last half hour of cooking.
