Crab Cakes

Also, just a description, rather than a recipe. Basically just crab meat,
sauted shallots, panko, an egg, mayonnaise, Old Bay, salt and pepper to taste. They are
served on a bed of baby mixed greens, accompanied by a trio of sauces: red
cocktail, green (tomatillo-based) cocktail, and Emeril's Remoulade.
