Chicken Lasagne

We didn't feel like going to the store, knew we had some stuff on hand, so here's what's for supper.
2 frozen chicken breasts, baked in oven with olive oil, lemon juice, marjoram, and Italian seasoning (yep, I use it). When finished, cube and set aside.
Bechamel with cheese, egg
Tomato sauce: saute diced onion and green pepper, add minced garlic. Dice some pepperoni slices (leftover from pizza making last week), add . Chiffonade fresh spinach, saute with vegetables. Pour in one can 4-cheese sauce (you know, the .99 on sale at the bottom of the shelf). Add, yep, shredded Romano/parmesan cheese in a plastic jar.

Layer (in a loaf pan, 2 noodles wide):
plain tomato sauce (before mixed with veg.), 2 lasagne noodles (oven ready), tomato/veg sauce, noodle, bechamel, diced chicken/ noodle, tomato/veg w/diced chicken, noodle, rest of plain bechamel.

I'll let you know how it goes. It's resting while garlic/cheese bread is in oven...

Put some fresh basil and red pepper flakes in a bowl, covered with oil. To drizzle.

  1. Hi Kathy,

I found your blog on the "Discuss Cooking" forum. How did the Chicken Lasagna turn out? It looked like a great idea.

I am a fairly new cook (as of about 3 years or so).

I also have a blog, I sometimes discuss food, but usually I discuss whatever comes my way.
