I cheated, and used frozen bread dough, the Texas rolls. After thawing, cut in half, then form rolls. Combine pork and beef, season with pepper and thyme. Salt right before frying. I started them on one side in a large cast iron shallow roaster. Turned them, then finished in the oven. Topped with a Co/jack Pepperjack cheese. Served on a bun with arugula and chipotle spread: cream cheese, sour cream, mayo, spoonful chipotle puree.
