Oven "Fried" Pork Cutlet
Dip the cutlets in olive oil, then in a mixture of panko, fresh ground pepper, parmesan, Italian seasoning.
Roast in the oven on a rack so the underside doesn't get soggy. I turned them part way through cooking.
