Who would have thought that shelled, unsalted pistachios would be so hard to find? I found shelled variety, in just a couple of places, Alpenglow and the east side Safeway. They are not cheap. I picked some up, with sea salt. Put them in a couple of rinses with warm water. Then spread them on a cookie sheet and put them in the oven to dry.
I'll be using them in a cheesecake... stay tuned!
