Mini-Mocha Cupcakes
The Recipe:
2 3/4 cups flour
2 3/4 tsp. baking powder
3/4 tsp. Baking soda
3/4 tsp. salt
Sift dry ingredients together. In a saucepan, melt together:
1/2 cup (1 stick) unsalted butter
1 cup cocoa (I used dark)
Add: to the cocoa mixture
1 1/3 cup strong coffee
1 1/3 cup sour milk
2 2/3 cups sugar
3 eggs 2 tsp. vanilla extract
Mix dry into wet ingredients. Measure out into pans. Baked at about 350F for 16 minutes.
Frost with a mocha buttercream: bag of powdered sugar, cocoa, sift together. Then add 3/4 cup soft butter, and cream with instant coffee. Add enough to pipe, or spread. Not too much.
